Christmas Pandoro with Apple Sauce

This Christmas Pandoro with Apple Sauce was inspired by blogger MammaPrada and its fab.I got a huge two thumbs up from the boys in my life (hubby and the two kids).

I’d made the apple sauce sometime ago when I was watching (in aggravation) the apples in the bowl being ignored.It made alot so there was a whole container full that I froze and I’m glad I did.

Its perfect for the busy mom who will be entertaining this festive season or ideal for the surprise guests dropping by.

What you will need:

  • A Store bought Pandoro or Panattone
  • Filling of your choice
  • A good knife
  • Icing Sugar
  • Sieve

What you need to do:

Cut the Pandoro into sections.

 

Spread the filling in between each slice.

Place each slice in different angle to the bottom one in order to create the “peak” effect.Once constructed and all slices have completed the Pandoro ,dust with icing sugar and serve. (Click on pic to watch video)

Perfect timing for our wonderful Heritage Month of September.

Most countries I know have some form of “sausage”The Portuguese  and Spanish have chouriço (Portuguese) or  Chorizo (Spanish), the Brits have their Pork Sausage and the South Africans have  Boerewors.

The most traditional ways of eating Boerewors is at a barbeque (Braai).

From time to time its nice to have the taste of Boerewors without the Braai (barbeque) especially during the week when you don’t have the time to wait for hot coals or gas, that’s when I make my Spaghetti Boere(wors)-Nyse.

My favourite boerewors at the moment is the Woolworths Grabouw its just the perfect mix of flavours for this easy dish.

This is an ideal meal for the South Africans living overseas if you can get hold of some boerewors and you wanting a taste of back home without the efforts of a weekend “braai” or “barbecue”.

I call it my easy mid-week meal because it simply is!

Recipe Spaghetti Boere(wors)-Nyse

Nutella Brownies – Lunchbox Treats

 I baked these on a whim on a rainy afternoon.They super easy and disappeared by the end of the day.

The best part…..3 ingredients you probably have already.

Ingredients:

  • 1 x cup of self raising flour
  • 1x cup of Nutella
  • 3x eggs

Method:

In a medium size bowl beat all ingredients together (this is easily down with your wooden spoon or a fork) continue until all ingredients are combined and there are no lumps.

Preheat oven to 180 degrees Celsius (350 F) and flour or line a square or rectangular baking tin with bake proof paper.  

Pour batter into lined pan

  
Bake for 12-15 minutes

Once ready remove from oven and allow to cool.

Cut into even squares and serve.

  
These are ideal for yummy lunchbox treats.

Coconut Macaroons (2 Ingredients)

I used to buy these when we lived overseas – so yummy

Pinterest has so many recipes – I had to “test” it out could it be so easy to make?

My boys have just “taste -tested” and have become BIG fans

What you going to need:

x1 Can of Condensed Milk

x1 packet of Coconut (200g)

What you going to do:

Preheat oven to 200 Degrees Cecilius

In a bowl pour out the whole can of condensed milk and with a spatula stir in the coconut

Using a cookie dough scoop (smallest one you have) place them on a tray with a silicone mat/baking paper

Bake / Grill for 10minutes (check on them @ every 2 minutes-them as they go golden quickly)

Allow to cool completely before removing them off the tray

We managed to make 42 Macaroons from this recipes.

Footnote: This is just one of those great recipes that you can always have at hand – ideal gift for a hostess , housewarming , class party , gifts…I can really keep going with the ideas here.
